If you love getting restaurant-style eggrolls but don’t love all the fat that comes with frying, this recipe is your solution! Egg Roll in a Bowl is a healthy twist on a favorite take-out dish. Instead of rolling and frying, everything cooks together in one pot for less mess. The recipe uses a bag of coleslaw mix, so there’s not much chopping to do. Everything comes together in five minutes. And it cooks in less time than getting takeout delivered!
This meal is fun to make together as a family, too. Kids can help by measuring, stirring and adding toppings, while adults handle the stovetop. You can save money by using any ground meat that’s on sale. The recipe calls for pork, but your egg roll in a bowl will be just as tasty with lean ground chicken, turkey or beef. You can also try tofu or a plant-based meat substitute to make a vegetarian version! Store any leftovers in the fridge for up to four days.
